Nonpareilles(4–7 mm)
Description: The smallest and most premium grade of capers.
Color & Texture: Uniform green-gray, firm yet delicate skin.
Flavor: Intense, floral, and slightly tangy.
Use: Ideal for high-end cuisine, sauces like tapenade, salad dressings, smoked salmon garnishes, and fine hors d’oeuvres.
Surfines(7–8 mm)
Description: Still considered a high-quality grade, just slightly larger than nonpareilles.
Color & Texture: Tender and consistent; easy to chew.
Flavor: Bold and aromatic without being overpowering.
Use: Common in pasta dishes, white sauces, and meat marinades.
Capucines (8–9 mm)
Description: A mid-sized caper with a slightly stronger texture and pronounced flavor.
Color & Texture: Greenish to olive-brown, moderately firm.
Flavor: Salty and slightly lemony, more mature in taste.
Use: Pizza toppings, stews, couscous, and preserved food products.

Nutritional Composition of Capers
Capers are particularly low in calories and rich in vitamins, trace elements, minerals, and antioxidants. They notably contain vitamins A, C, E, and K, as well as minerals such as copper and magnesium. These nutrients help improve liver function and regulate blood sugar levels, which is beneficial for diabetics. Additionally, they help reduce LDL, the “bad” cholesterol.
Capers are also a notable source of bioactive phytochemical compounds, such as flavonols. They are especially rich in quercetin and kaempferol, two flavonoids known for their antioxidant properties. According to the Phenol-Explorer database, capers are the food richest in rutin (a derivative of quercetin), with a content of 323 mg per 100 g.
Harvesting and Production of Capers
The harvesting of capers is a meticulous task that involves hand-picking the flower buds of the caper bush before the flower blooms. The smallest buds, measuring between 5 and 7 mm, are considered the finest. The larger ones, ranging from 11 to 13 mm, offer a more pronounced flavor. In France, the harvest typically takes place from June to October–November.
Morocco is the world's leading producer and exporter of capers, with an annual production estimated between 20,000 and 28,000 tons. The main production regions include Fès, Taounate, Marrakech, and Safi. Around 95% of this production is destined for export, making Morocco the global leader in this sector.
